Avocado Tortilla Soup

This may be the fastest soup to ever be made – 10 minutes tops! Each 1-cup serving is also only 165 calories and packed full of healthy, whole foods. I think the toppings on this soup are what really take it over the top.

Avocado Tortilla Soup

adapted from Vitamix’s Whole Food Recipes cookbook

2 cups chicken broth
5 Roma tomatoes, quartered
1/3 bunch cilantro, stemmed
1 garlic clove
1 teaspoon black pepper
1 teaspoon salt
1/2 avocado, peeled, pitted
1/2 lime, peeled
1/2 cup canned black beans, drained
1/2 cup corn, drained

optional, but strongly recommended for garnish:
2% greek yogurt
tortilla chips
cilantro, stemmed
mexican-blend shredded cheese

Place broth, tomatoes, cilantro, garlic, pepper, salt, avocado and lime into Vitamix (or any other blender) container in order listed and secure lid. Blend on high. If you have a Vitamix blender, you’ll blend for 6-7 minutes or until heavy steam escapes from the vented lid. Reduce speed to Variable 2 and remove the lid plug. Drop in corn and beans and blend for an additional 10 seconds.

If you don’t have a blender that is able to heat up, you’ll blend all ingredients and then heat on stove until hot.

Pour soup in bowls and garnish with shredded cheese, tortillas chips, sliced avocado, greek yogurt and cilantro.

    Fantastic alternative to the lackluster version in the Vitamix recipe book. Adding the cilantro and a lot more tomatoes is absolutely essential to it tasting like an authentic tortilla soup. I did add the tortilla chips into the Variable 2 ending, however. I didn’t even add the toppings, except for the yogurt. I could see how they might add color for a pretty plating It is such a creamy soup, cheese and avocado would be superfluous Thanks for this!!

    I’ve made this soup several times. I always add extra garlic, and a jalapeno. What I love is to add some corn & black beans in a couple quick pulses at the end, to make for a little chunk.
