Mom’s Easy Chicken with Biscuits Casserole

This is so simple and has been one of my favorite’s since I was a child. Now, every time I go home to visit my parents, my mom usually makes it – it helps that it is one of the BF’s favorites, too!

10.75 oz can Campbells Condensed Cream of Chicken Soup
2 cups flour
16 oz. pkg. frozed mixed vegetables (peas, carrots, green beans, etc.)
2 tablespoons butter
2 Chicken Breast cut into 1 in. pieces
2 teaspoons baking powder
1/8 teaspoon ground black pepper
1 teaspoon salt
1/2 cup sour cream
2 tablespoons sugar
2 1/2 cups shredded cheddar cheese
3/4 cup milk

Place frozen vegetables into a large saucepan with enough water to cook and place on range to cook. Cook chicken in 2 tablespoons of oil in a large skillet. Sprinkle with black pepper to taste. When both are cooked through, drain vegetables and add the cream of chicken soup. Heat until starting to boil. Then scoop the chicken from skillet and add to vegetable mixture. Stir to mix. Add the sour cream and remove from heat. Pour this mixture into a 9 x 11 baking dish. Sprinkle cheddar cheese on top. Mix remaining ingredients to form a biscuit dough. Drop by spoonfuls over top to cover. Bake at 350 degrees for approx. 20 minutes until golden brown on tips of biscuits. Makes 8 servings
