A very simple salmon

This very well may be one of the simplest recipes that I will ever post. It only has three ingredients, uses one pan and takes so little effort to make. Baking the salmon in the lemon juice produces such a tender piece of fish and requires very little extra seasoning. I love lemon, but you may adjust the amount that you use to fit your preference.

For kids or others who don’t like fish, make a healthy “dip” by mixing a bit of nonfat greek yogurt (fage is my favorite!) with a heaping spoon of dried dill.

Simple Salmon
2 pieces Salmon
2 lemons, juiced and zested
1 tablespoon dried dill

Place salmon pieces in lemon juice, sprinkle lemon zest and dill over top. Marinate while covered in refrigerator for 30 minutes in 8 x 8 (or similar small) casserole dish. Remove and bake in oven at 350 for 20 minutes.
